Puh-Cahns ..and loaded trees

What a great day this has been....the weather has been cool and there has been a slight breeze.  A perfect day to do nothing but relax.

When the weather starts to get cool, you know it's time for the Pecans to start dropping...Here in East Texas, the Pecan trees are so loaded down, and there has been a lot of huge branches falling to the ground, because of the extra weight.


Pecans are pretty pricey around here, which makes you want to gather every single pecan that can be gathered... 


The below picture is the way I prefer to get them....


Out of the shell !!!!

Nutritionally, the pecan is a concentrated source of energy...it's an excellent source of protein and is rich in 
B-Vitamins and minerals.


Chewy Pecan Pie Bars

1 teaspoon baking powder
2 cups all purpose flour (divided)
Brown Sugar: 2/3 cup and 1/2 cup
1/2 cup butter or margarine
4 eggs
1-1/2 cups dark corn syrup
2 teaspoons vanilla extract
3 cups chopped pecans

Grease 15-1/2 inch x 10-1/2 inch jelly-roll pan.  Preheat oven to 350 degrees F.   I  medium bowl with fork, mix baking powder,
1-1/2 cups four, and 2/3 cup packed brown sugar.  With pastry blender or 2 knives used scissor-fashion, cut butter or margarine into flour mixture until mixture resembles very fine crumbs.  Pat mixture firmly and evenly into prepared pan.  Bake about 10-12 minutes.

In large bowl with mixer at med speed, beat eggs until foamy.  beat in corn syrup, vanilla, 1/2 cup packed brown sugar and 1/2 cup flour until well blended.  Pour egg mixture over partially baked layer; sprinkle with pecans.  Bake 30 to 40 minutes longer or until set.  Cool in pan on wire rack.  cut into small bars.

Few Free Tips....

***  store in freezer shelled or unshelled...

***   About 2-1/2 pounds of pecans in the shell yields 1 pound of shelled nuts, or about 4 cups.

***   Tight containers are necessary for storing pecans.

***   Shelled pecans should be allowed to dry before storing in airtight containers.

My Crush On Fall........



Goodness......I sure do have a CRUSH on Fall!

I love the beautiful bright colors and all the wonderful 
scents that seem to fill the air, during the Fall season.

Don't you just love the smell of fresh baked apples?
I do, and I love the taste of them as well.

I am so excited about the cooler weather that is coming our way.....Our temps are suppose to remain in the 50's this coming weekend and this means sweater weather.

I've made a list, just to prove I really do have a crush on Fall.

Fall Snacking

Fall.......aside from all the gorgeous colors that pop out everywhere.....what would another GREAT thing about Fall be????

"E-A-T-I-N-G "  is something that comes to my mind!

Check out this delicious snack that our youngest daughter
"Shanda" made....    



It starts with all of these goodies......
Peanuts, Almond Bark, Pop Corn, Candy Corn.



Pop two packages of pop corn...(the kind without butter or with light butter)

Oh,  and be sure you pick out the kernels that didn't pop!



Melt the Almond Bark ......watch carefully
Do not over cook....just melt the stuff.


Mix the dry ingredients together and spread it out on a cookie sheet, lined with wax paper.



Pour the melted Almond Bark over the dry ingredients.  GENTLY toss to coat.

Let set for at least 30 to 40 minutes.

Break it up and place in air tight containers.

Makes a great "BOO" gift for a friend or for a teacher....

The Bake Sale




Don't you just LOVE a good ol' Bake Sale?

I do!!

There was one being held at our church, this past Sunday morning.......after church....

I couldn't wait to get out to the tables, in search of
the perfect dessert that I would be taking home with me.

Every dessert looked SO GOOD, but there were a couple of  them that really caught my eye.

I wonder how many of us judge what dessert to purchase, based upon how great it looks?  You know, kinda like a big four layered coconut cake that is topped with a cherry.

Would this cake be most people's choice, over a plain, simple
little box of cupcakes?  Probably so!

I ended up buying a pan of homemade popcorn that was drizzled with white chocolate and nuts.  I also purchased a 
great looking pumpkin roll......

I am super pleased with my purchases.   Both of these desserts taste so good!

Back to my point.....Do we buy according to "eye appeal?"

Like the desserts.....

A person's life should not be judged by it's decorations!
(fancy shoes, lots of bling, clothes, the car we drive, the house that we live in....etc.)

I would like to think that when people look at me, they see the richness (as in Christ Like measure) that I live by.

The world today is looking to fill us with jealousy, bitterness, anger, lots of pride, and selfishness....It also teaches us that
material  things and money are the things that will make us a success.

What the world doesn't know is that our success comes in knowing Jesus Christ.......God has written the BEST recipe
book of all times.

The "BIBLE"

Thankfully, God does not look at us on the outside.....HE is interested in how good we are on the inside.

Are we full of compassion for others?  Do we show love to others.....Do we judge others by what they have or by how they look?    

The recipe for life that God is pleased with is 
our goodness.....and our Trust in Him.

Now, I'm off to grab a slice of that pumpkin roll......or wait, 
white chocolate popcorn would sure be great, while we watch the ballgame!!
