All About the Broth.....

Never.....does it turn out like my moms!

Southern Cornbread Dressing........

Here it is, Thursday before Thanksgiving (Thursday) and I'm stressing over the Dressing.   I've made dressing many times, but it never comes out, tasting or looking like my mom's dressing did.

Why is it that all the (many) questions that we need to ask our mom's.....seem to be asked too late?  It has been 10 years since my mom's passing, and I have so many questions that will never get answered.    Why did I not pay more attention to the small details in life?     Like.....How to make dressing the way you did mom!!

Mother was one of those cooks that did not have to measure.....she just knew!!  I have a list of all the ingredients that she used in her dressing.....just not the measurements.   Onion and celery (check)
Butter (check) Cornbread (check) dry bread (check) eggs (check) Sage and Poultry Seasonings (check)  Broth (????)

I don't know how much broth she used, nor the consistency of the dressing with the broth added.....just before going into the oven.


Seems like a simple thing doesn't it?  Well...it's not...NOT FOR ME!

I tried looking this up on Pinterest and other cooking websites, but I haven't found a recipe that seems to measure up!!

The broth added ranges from 2 cups to 5 cups.....BIG DIFFERENCE HERE..

If only I had paid closer attention!!

So.....for all my blog friends who make Southern Cornbread Dressing.....  I'd love to hear how you make your dressing....

After all.....It's all about the BROTH, bout the BROTH, bout the BROTH.

If you still have your mom......Ask questions...write them down...don't wait until it's too late!!

  2. I know what you mean about asking questions. There are so many questions that I wish I had asked my mom and dad when they were alive. When my mom was alive I would go home and get out her old pictures and go through them and ask her who a lot of them were. I wasn't smart enough to write on the back and now when I go back and get them out there are a lot of people I don't know. :-(

  3. One more comment.....I love cornbread and I still remember how my mom made it. She used self-rising meal and put buttermilk in it and that was it. She would mix it with her had to a certain consistency and then put it in a hot cast iron skillet to bake. I love to fry cornbread.....yummy.

  4. It all depends on if you want moist dressing or drier version. I use the broth from the turkey and then add broth until when I mix it with my hands it very juice. It turns out moist in the middle and crispy along the edges for those who lit that way. My ingredients are the same as yours.

    I know you must make delicious dressing. The baton has been passed on to my oldest daughter this year....boo hoo. She will be making the turkey, dressing and gravy. But she's 53...bout time I turned in my apron on Thanksgiving. HaHa

  5. I understand you completely as I've never been able to duplicate my mom's dressing. I know she used grated bread crumbs, eggs, celery, water, S&P, very simple, and I watched her do it many times. It looked kind of soupy, then baked up perfectly, with her always getting raves about it. My soupy turns into a gluey slimy mess! I gave up---now I just use bread crumbs, fruit and maybe sausage.
