Yummy Dessert.....

This recipe is Better than BETTER....

"Princess Pie"

I found it on Facebook, however....I (think) I have seen it on Pinterest as well.

I only had a small teaspoon taste, but I can guarentee you that this is a super yummy tasting dessert.

Our menu for Church Home Groups last evening was.....Mexican food.
Everyone knows that you can't have food without a DESSERT!!

I took fajitas and this fabulous princess pie!  A nice cinnamon dessert would have been nice, but I was very anxious to try out this particular recipe....

It was a hit....and it was delicious!!

Recipe:

Princess Pie (Coconut Cream Pie)
crust:
1 cup flour
1/2 cup butter, melted
2 Tbs sugar
1/2 cup chopped pecans - optional

Mix and pat in an 8 x 8 inch pan, bake at 350 degrees for 15-20 minutes, until just beginning to turn golden. Do not over bake.

Layer two:
8 ounces cream cheese, room temperature
1 cup powdered sugar
1 cup whipped topping

Beat together sugar and cream cheese. Fold in whipped topping. Spread on cooled  crust.

Layer three:
1 small package coconut cream instant pudding  (I added extra coconut)
1 1/2 cups whole milk (any milk will do, but whole milk makes pudding so much tastier)
Mix until thickened. Spread over cream cheese mixture.

Top with remaining tub of whipped topping.
Toast 1 cup coconut. Sprinkle evenly on dessert. Refrigerate

A must try recipe....

I wouldn't have had the will power myself. I've been looking for a good coconut cream pie recipe.

  3. I have actually had this before and believe it or not, it was made by a friend at church. Another friend made this with butterscotch pudding instead of coconut and it was yummy, too! Thanks for the recipe!

  4. Coconut cream pie is mine and hubby's favorite pie. We used to live near a Tippin's Pie restaurant and unfortunately they had the best. This one looks so yummy!
