Yummy for the Tummy

Isn't this a cute little tea cup?  I recently found it.   I didn't find it in a store, I found it in one of my cabinets.  The colors are perfect for my newly decorated kitchen......I actually received this cup as a gift at a ladies Tea that I attended a couple of years ago...

I immediately thought about something that I could bake to enjoy along with a nice cup of coffee in my adorable tea cup.

A very dear friend (Glenda) gave me a recipe several years ago for "Pecan Pie Mini Muffins" and I am thinking this would be the perfect thing to bake......This is one of those must have recipes.....

1    cup packed brown sugar
1/2   cup flour
1   cup chopped pecans  (I always use extra)

Mix above items together and set aside

2/3  cup melted BUTTER (no substitutions)
2   eggs  (beaten)

In a bowl combine sugar and  flour...add pecans and set aside.
Combine butter and eggs; mix well.  Stir into flour mixture until moistened.  Fill greased and floured muffin cups 2/3 full.  Bake at 350 for 20 to 25 min.  Cool on rack.

I always double the recipe because they do not last very long around this house....

This is one recipe that I will definitely keep around.....

Let me see....I think the word was

"KICKING"

That is what my son-in-law had to say about the delicious taste of these cute little muffins....

  4. How sweet! Ben is sort of like Marsha's office ladies...he wishes I would bake more. These also are one of his favorites, only thing he can eat all he wants and stay nice and skinny!! Glad you enjoy baking them....Marsha was right, the sand tarts are really good....let me know if you want the recipe.
